Açorda (Ah-Sor-Dah): Portuguese Bread Soup
Move over French Onion Soup! Açorda (Ah-Sor-Dah) has arrived!
Açorda is one of the oldest dishes of Portugal, with deep roots in the rural life of the Alentejo. Its origins date back to the Middle Ages, when bread was the foundation of daily nutrition and nothing was wasted.
The ingredients are simple: bread (1 loaf), cilantro (1 bunch), garlic (4 cloves), salt and olive oil!
1. Using a mortar and pestle, crush the garlic.
2. Finely chop an entire bunch of cilantro.
3. Cut the loaf of bread into 1-2cm cubes and set aside.
4. Bring 500mL of water to a boil and stir in the garlic, cilantro and salt to taste.
5. Then, add the bread pieces and let it soak for 5 minutes.
6. Mix vigorously and add olive oil to taste.
